I love risotto.
It’s creamy and carby and oh, so delicious. I love this recipe that I found on The Pioneer Woman’s site. If you love cooking and are at all familiar with food blogs, you probably know who she is or have seen her site. I absolutely love any recipe she posts, and she’s entertaining and witty to boot!
Anyway, this Vegetable Risotto is to die for. It calls for goat cheese as well as parmesan, something I would never have thought to use. But let me tell you, the goat cheese is perfect and adds something just a bit special to the dish. I used carrots, squash, zucchini, and broccoli as my veggies, but you could use whatever you have on hand! You can find the recipe, here.
You can use the risotto as a nice side to any meal, or if you’re feeling like you need a good dose of comfort food, you can eat it as your meal… (it has veggies in it! That counts for something right?) I won’t tell 🙂
