My Italian Spinach Salad

This post will probably blow your mind.

Mainly because it doesn’t involve butter and sugar and loads of calories.

This yummy salad is adapted from a recipe I learned while I was in Italy. It’s not even really a recipe, just toppings thrown on a bed of spinach. But boy is it delicious and filling, something I’m always looking for when I’m trying to eat healthy. The chick peas in the salad help add protein and the meatiness that keeps you from feeling hungry an hour later. I used green olives, mainly because I find black olives to be too bland, but go with what you prefer! Mozzarella or feta cheese would also be delicious, but I picked up a yummy goat cheese with some basil (mainly because it was on sale.) Make it your own!

This recipe is super informal. Mainly I just dress the salad with olive oil and lemon juice to taste. A sprinkle of salt and pepper to flavor, and the toppings do the rest.

Italian Spinach Salad:

A couple of handfuls of spinach

olive oil

lemon juice

salt and pepper


olives (black or green)

red onion

garbanzo beans (chick peas)

cheese (feta, mozzarella, goat cheese, whatever!)

Toss your spinach with a dash of olive oil, lemon juice, and salt and pepper. Top with quartered artichokes, olives, chopped red onion, chick peas, and a generous portion of cheese. Enjoy!
